-1/4 cup sugar
-3/4 cup brown sugar
-1 heaping tsp. cinnamon
-1 egg (cage-free eggs are my egg of choice)
-2 tsp. vanilla
-1 stick of butter, room temperature (NOT melted)
-3/4 cup flour
-1/2 tsp. baking soda
-1 1/2 cups old fashioned oats*
-1 1/4 cup milk chocolate chips*
-1/4 cup chopped pecans*
Preheat oven to 350 degrees, then:
With a mixer, blend together both sugars, cinnamon, egg, vanilla, and butter until everything is creamed.
Slowly add flour and baking soda until blended. Then add oats, chocolate chips, and pecans. Mix until everything is combined.
Place cookies baking tray:
I use a cookie scoop so that I can get similar sized cookies. Mine is equivalent to about a tablespoonful and you can find them in most any store in the kitchen section. But you can also just use a spoon.
Bake: Bake at 350 degrees for 12 minutes. Allow the cookies to cool on their tray before scooping them off. They will be incredibly soft, so if you like a crispier or crunchy cookie, allow them to bake a few minutes longer.
*Oats: Do not use instant oats.
*Chocolate chips: If you prefer a different flavor than milk chocolate, go for it! A mixture of white, dark, or milk chocolate would be delicious!
*Pecans: I added these because I had them on hand. But if you don't like nuts or want to use a different kind, feel free to mix it up or leave them out!
